Omi blades are in ME3 because they are awesome.

in the case of the Omni blade  a kinetic Barrier holds together the dust form material provided by the omni tool micro fabrication system thus forming the omni blade itself

And the holographic omni blade is the visual representation of the blade of energy, just as the tech armor is a hologram representing energy. the hologram isn't doing anything, it makes the blade of energy practical to use as you can actually tell where it is.

there is a tweet (or maybe a post) from one of the devs about it. Honestly too lazy to find it. 

no wait here is the quote about what they were workign on as an explanation for the omniblade

Patrick Weekes' recent Twitter about the omniblade says:

Yes as crimson pointed out, the blade is not a hologram.

Its created using the canon omni tool minifacturing capability, (which has been in the codex since ME1.) then given extra punch and stability through a ME field.

While I might not like how it looks like the rest of the omnitool ,I suspect that was done just to keep it in line aesthetically with the rest of the tool.

And you know what? Biotics is a very big lore breaker in game, yet no one wants to rag on that. I wonder why? (And the answer makes the omniblade complaints hypocritical!)

I assume your joking, unless you really liked the epic elbow jab and accompanying "UGH!  UGH!  UGH!  UGH!"  A melee power move is not just "teh awesome button," its a much needed gameplay addition.
