Have you considered duelling him instead? Accept his duel for Isabella and you fight him one on one. At the very least you don't have to fight the Saarebas, which are a pain to fight imo...

I had to look up on the da wikia how to do this fight.
If Isabella doesn't show up (she didn't in mine because I still don't understand the fine elements in the friend/rivalry system), you'll need to fight the Arishok. If you take Fenris, he'll say that you can duel the Arishok. If you have a high enough respect rating with the Arishok and you have shown yourself worthy (do have you have to kill the four guards before taking on the Arishokd and the party).
I've found Anders to be the best mage here (be sure to make Anders have the regroup spell and the aid allies spell) - Varric is great here as well. Aveline is sort of given, I think? Also be sure to do Isabella's quest first, if you want to have a chance to get her back again when both Aveline and Isabella ask you for your help.
Anyway, if you don't want to fight the whole Arishok party, take out the guards in the corners first, then take on (some of) the mages. At one point the Arishok will move down the stairs. When you see this, immediately pause the game, and have Hawke and Aveline and Anders pummel the Arishok. At one point, there'll be a bubble around him, and then a cutscene will appear...
Also, there's a mod out there that lets you choouse your followers' armour....I use it and it really is a great mod...

What class are you? If you're a mage, the one-on-one duel with him is a cakewalk, if you know the right tricks.

On my mage the duel lasted for such a long time (was a spirit healer T.T).
Anyway, i had to redo the full on fight a couple times at first as well, the hardest part was actually the saarebas (mages), if i didnt take those out as soon as possible i'd die horribly. Have Aveline, taunt the arishock and maybe pause & kite him about a bit (together with some of the other melees if necessary), have your team focus on the mages, then move up them further up the stairs and clear out one side of the stairs at a time (dont forget to chug potions, and pause when necessary to run, if no friendly fire you can also have varric do arrow shower to slow down/kill stuff). Giving all chars poison on their weapons helps as well.

If you're having trouble with the group fight you can have everyone target the arishok directly. Once he's dead the fight will be over whether you kill all his mooks or not.
Also remember Qunari are weak against cold and nature.

Just run around in circles. That helped me just fine.

explain? I find the Mage to be the hardest class to work with when fighting him.The Baconer wrote...

Force/Elemental/Arcane Mages pwns him on any difficulty. Just dodge and paralyze.

Yep
Spec your mage to have some combination of cold spells, Gravitic Ring, Horror, and maybe even pick up some stun grenades. Gravitic Ring is the best.
Freeze him in place, and hit him with a cold/nature stave and any other non-fire/lightning spells you have.
Shadow Rogue is also quite good. Bring out your dog, then do something to remove threat from yourself, then hit him with everything you have.

What kind of warrior are you, General Josh?

Templar/Reaver warrior can beat the Arishok quite easily with the right abilities. Just make sure to have one or two tar or fire grenades with you.
