I switched back to the 360 since my machine has been acting up. In my PC game I modded Carver's Spec from Templar to Beserker (he's a Grey Warden not a Templar!) using the console. I'm wondering if it's at all possible to do this on the 360?

Really? I know there are couple of programs and save editors out there that can modify money/xp/approval ratings. I was wondering if any of them have the ability to add/remove talent trees for NPCs. Honestly I'm not even trying to give my self an edge. I'd be essentially "trading" the Templar spec for Beserker and Force Mage for Spirit Healer in (Circle) Bethany's case. Strictly RP purposes here. Hell, I don't even take a 2nd spec for Hawke other than unlocking one for it's passive benefits.
If anyone could help me out I'd appreciate it.

From the DA wiki:
And since you cannot mod console games either, then you're stuck I'm afraid.
Note: Despite the name, the console is not available on console (i.e. PS3 or XBOX360) versions of the games.
