And I'm wondering if Carver's dialogue at any point changes if push him onto the friendship path instead of rivalry. And if it does change, which path, in your opinion, is better?

It doesn't really change based on that. What does change his dialogue is whether he becomes a Templar or a Grey Warden.
When he's a warden, he's much happier and friendly towards Hawke.
When he's a templar, he's so dang busy throwing a hissy fit that Hawke didn't take him to the deep roads that must mean Hawke is responsible for everything that goes wrong with the family. And a general jerk. And he blames Hawke for....well, I don't know if you want a spoiler or not, but he blames Hawke for something that he doesn't as a Warden.
Templar Carver and Hawke do have a very emotional reunion scene if Hawke sides with the templars in the final battle however, and they make up. Warden Carver and Hawke never really stopped being brotherly.

Carver's starting friendship/rivalry score starts out that you pretty much have to get every friendship point that you can with him to make it onto the friendship side of the scale. But neither sibling has friendship/rivalry talents that only unlock at one extreme or the other.
The big decision is the Deep Roads Expedition. Leave Carver behind and he joins the templars. Take him with you and get him to join the Wardens, and he really does find his place in the world.

Just remember to have Anders in the party if you want him to be a Warden. Otherwise he dies.

Yeah, he's definitely going to the wardens. I always left Bethany in Kirkwall to the circle, but fighting endless, glorious battles against darkspawn seems like it will suit Carver.
