In BGII I collected EVERY SINGLE item that had a story with it. At the end of the game I bought out a shop and painstakingly sold them into it in a systematic order. That part alone took 2 days.

This time around I'm going to honor that tradition by not selling off such equipment no matter how trivial or how much I need the money. I just can't bring myself to do it.

Do you figure you'll bring over any weird behavior with you into the game?

Well, being that Warden's Keep will be available at launch (though probably not immediately available till later in a play through), I'll probably be holding on to as much swag as possible to decorate the keep with. I'm a major souvenir junkie.

This. You have no idea how much time I spent arranging gems, weapons and various other shiny things in the display cases and shelves of my house in Oblivion.

Ditto. I even downloaded a special house (mod) loaded with many display cases and mannequins to be used as my museum.

Items don't have non-equiped in-world visual representations in DA:Origins. They only exist inside containers, or on characters. So, you won't be able to use them as decorations outside of special circumstances. And unfortunately, the group inventory is limited. This is mitigated by the fact that there's somewhat limited item types according to reviews - but mods will probably exist to allow for better item storage.
