Hawke just didn't think his "test" was very compelling. She thought he was going to do something a little more objective when she made that suggestion, and his logic didn't really make sense to her. If there's a demon, it won't be able to help but manifest with one minor blow that it would have been able to prepare for if it had been paying attention to our conversation at all? Except that she'd seen Anders take major hits all the time without the slightest sign of Justice coming out? My particular Hawke just didn't really see that as evidence either way - it could just as easily mean the demon wasn't a complete idiot as that Keran was actually clean.
My understanding is that Merrill is more compelling, but she wasn't there.
So... Hawke relied on Keran's behavior as her sign, and that sign seemed to say "possessed."
As you say, though, without meta-gaming that was about the best she could do, so I didn't let her change it even though in later acts she realized she was probably wrong.
