I read up through the character creation part, but after awhile I started to get really overwhelmed! I think I'm biting off more than I can chew. The game is soooo complicated.
If you just follow along with the book, there shouldn't be a problem. Don't try to take it all in at once, just keep reading and follow along =) Worse comes to worse, I could guide you through Skype.
If I recall correctly there is one detail that gets mentioned but not explained. I don't really remember what it was. Perhaps it was skill focuses? The one detail that is missing from normal reading order took a while to find, but other than that it should be as easy as just reading, picking between the presented options, jotting it down on the character sheet and flipping through the pages.

So I'm kind of annoyed that I could try to create a Dalish elf who, because of the dice roll, has no dexterity, is fat and slow, and isn't sure which end of the bow to pull back lol
Don't the standard rules say you roll up a certain pool of points, and then you distribute which points you want which? Like, perhaps I roll a 16, a 13 and an 8 etc. Then I can put my 8 in Communication, Strength, Dexterity, Cunning, whatever I want to. It's been a while since I played but that's usually how it goes.
I'm guessing there's also a point buy system in there, which would work much like applying stats in DAO/NWN/KotOR. Been a while since I opened these books though =) Point buy is good cause it means everybody are equal, they're just specialised differently. But some find it takes away a bit from the "magic feel." There's a certain flavour to rolling up the stats instead of customising it to the gritty detail, especially since you can end up creating somewhat weak or even exceptionally talented characters that way.
