Cullen being an out of work templar washing horses for his next lyrium fix, who asks you for help in acquiring more horses/soap. While on your mission you get attacked by crazed muttering mages in templar gear, but Cullen swoops to the rescue. After the rescue you go on a date with him, where he falls in love with you and will try to overcome his lyrium addiction

I'm partial to him begrudgingly being sent on an assignment with the PC and ending up as a companion. Then being set up on that blind date and it turns out to be the PC as well... awkward!

For me personally, I think they should either take a leaf out of Mass Effects book and put it the night before the "big fight" or have it completely dependant on the love interests personality, so if the companion is someone like Isabela then they'd be willing to have sex almost immediately, where as a shy or apprehensive love interest, like Cullen for example, who would probably be more inclined to finally decide to "do the deed" the night before the battle because he finally realises that this could be the last time that he and the protagonist could be together.

This, but part of me feels like there should be more than one opportunity for intimacy. Not necessarily "the deed", mind you. I feel like it would add to the romance as a whole if you had at least one meaningful moment other than the slapping of the pink parts. Like if you had a character such as Isabela, the sex would be almost immediate but at the end there'd be an actual emotional moment. With Cullen, the emotional moment would make more sense to come first and save the horizontal happy dance for later. I just want it to feel more ... I don't know.... "realistic"? Make sense?

Well, I think ME3 was a bit silly; I actually thought I had screwed up the romance somehow because Kaiden didn't even acknowledge my Shepard as his love interest. Boy was I relieved and pleasantly surprised when he showed up at his door the night before the big battle...
It's just, okay, they said they wanted to be together. They agreed to be lovers. But then they didn't have sex because .... WHY????
I think DA:O did it best. The Warden flirted with the LI until genuine affection sprang up between the two, and once approval reached a certain point (different for every character), they could sleep together.
DA2 was too rigid, although I like the love scenes better (the fluidity of the characters; think the scenes themselves could be longer ... not that I necessarily want to see actual sex acts, mind you).
EDIT: Also, is there any canon reason for why Cullen would wait to sleep with his lover? Are templars chaste?

I liked the DA2 a little better as well, if only for the intensity. DA:O seemed a bit bland. I also agree on the DA2 scenes being on the short side.
As far as Cullen canon, I don't think there is any reason for him waiting until the very end. Templar's aren't necessarily chaste (Aveline's husband, Wesley) I don't know if he'd be the jump right in there kinda guy though. It feels right to me that he'd wait at least a while out of propriety if nothing else. Just my take.
Edit: "just my take"..... things are getting creepy in here if Lola and I are talking alike!

I mean, how freaking adorable would it be if your protagonist got himself/herself into a dangerous situation during which you're separated from Cullen. BUT at this point it's early into the potential relationship (awkward flirting etc), your protagonist reunites with him and the other companions. Cullen comes running over to you, scooping you up into a tight hug "thank the Maker you're safe! I was so scared I'd lost you!", suddenly he realises what he's just said/done infront of everyone and releases the protagonist from his grip, taking a step back looking embarrassed "er... I-I mean, I'm just glad you're ok..." *que smarted mouthed companion making some comment about it* "Um... I'll just be over here... Digging myself a hole". *Que protagonist looking shocked, but pleased at Cullen's sudden, unexpected outburst.*
