Ignoring all the loref*ck, is it possible? I'd imagine with the 10% racial spell resistance Dwarves would make awsome Templars?

Yes, it is possible, and it wouldn't be against lore, since your character is trained to use Templar abilities, which doesn't mean that he would be a Dwarven Templar of the Chantry.
