2, Nowadays, there are prescriptions to treat HPV and even HIV to the point people who are infected can live long normal lives with caution. Those who don't have it can take vaccinations to protect themselves from infection.
3. The Codex I think made mention that nearly all diseases on earth were practically treatable and with military people being given standard issue protections for outside the body, it's almost to be expected they'd be given treatments to protect the inside of their body. After all, we all know how "active" soldiers can be.
4. If the talk with Mordin didn't cover that particular spot of worry besides the risk of Jack accidentally killing Shepard in the middle of their special time, let alone after, I'd be surprised and disappointed in Mordin for missing that.
So, yes, I do think there'd be no reason to worry about Shepard catching any diseases from a love interest.
Though we do have to worry for the love interest catching something from Shepard.

Obviously she's using the dating website to have a child safely. (Hence the scans). She wouldn't go anywhere else for fear of diseases. 1 out of the 4 and she heads to a prenatal medical center. A place that tends pregnant women. Like screening etc.
The writer wanted to make a joke (correspondence 2-3) but didn't want to go overboard (hence 1 person). The writer could have wrote in invitro but these dossiers are meant to be somewhat of a joke, nothing comedic about invitro. For example TIM as Hugh Hefner went WAY overboard.
