Hey! Politically, sacrificing Earth could be an amazing icon throughout the Galaxy and help establish human dominance! We'd be able to afford to move a planet to take Earth's place! (Note: Currents may be screwed but who cares? We could make it an island resort planet!)

Earth isn't in that great of a position to do much of anything either way, assuming we're solving everybody's problems before finally showing up to save Earth.

In addition to this, Earth's only purpose in the grand scheme of things is supplying the Alliance. Human Council has the Volus under their control, which are essentially the merchants of the galaxy, which means we're going to be capable of making due without Earth.

I don't think you understand. Humanity cannot recover as easily as the other races can bar perhaps the krogan, drell, and quarians. They all have populations on well developed worlds that totally dwarf any of ours except for the Earth. If we lose Earth the center of the human economy will vanish. We'll be left poor and desperate. Even if the other races all lose their home worlds they still recover more easily because they have larger populations and thus economies.

We've already lost Earth, it's been devastated by the Reapers and what we're going to save isn't going to be much regardless of how quickly we're capable of gathering an army (which isn't going to be quick, judging as how they found the Reaper invasion as being the perfect time to bring up their problems).
Saving it will leave us only with ruins, dead bodies and civilians (which may or may not be indoctrinated) coming out alive. Regardless of how fast we're going to save Earth, we're going to need to recover and it's going to be with nearly the same pace (as we'd be rebuilding Earth nearly from scratch assuming the territory isn't perma-damaged).
They all have populations on well developed worlds that totally dwarf any of ours except for the Earth.
We're going to have this problem anyway unless for some reason a lot of humans weren't killed by the Reapers / Husks / Praetorians / Indoctrinated spies.
If we lose Earth the center of the human economy will vanish.
Which is why we're running the show with the Volus at our backs, they offer us control of the galactic economy (they are the ones which introduced everything to everybody). We're running the show, eliminate the opposition in one fell swoop and we've got it fully under control, we'd have nothing to oppose us while we're rebuilding.
If we save Earth, we're still not at our strongest.
Add in some carefully placed indoctrination here or there, should Cerberus be capable of mastering the technology and offers it to the Alliance (which they usually do), and we've got ourselves our own galaxy.
