It's not the idea of a 1-hit kill that is bad. It's the inabillity to avoid said 1-hit kill.

The difficulty is what bring everything together. Getting blasted by an angry Krogan then fireblasted by a Vorcha on insane may make you mad but when you overcome that it makes you feel like a champion. If eve on easy Mass Effect is too hard then you might have some problems, I couldn't die on purpose on easy so I welcome the difficulty bump. Plus, who said saving the entire known galaxy from eradication would be easy.
