A little confused about the timing.

Okay so this may be a bit long but bear with me. In Lair of the Shadow Broker, you can read the Shadow Broker's Dossiers at his base. Tali's Dossier shows a conversation she had with the Shadow Broker during Mass Effect 1. In it she asks the SB for safety because of the information she got about Saren's betrayal. SB tells Tali to meet with Fist and that he will protect her. Tali goes to the meeting (this is when you first meet her in ME1) and she finds out that Fist tried to sell her out to Saren. Tali tells SB this which upsets him. He then contacts Wrex to kill Fist. However (now this is where I get confused), in ME1 when you head down to Chora's Den to speak to Harkin, you see Wrex trying to get in. He already has the order to kill Fist but you haven't met Tali yet which means she didn't get betrayed by Fist so she couldn't have told SB about it therefore SB wouldn't have hired Wrex to kill Fist. Now am I missing something here or is this maybe an error on the developers part?

SB didn't send Wrex to kill Fist because Fist lied to Tali. He sent Wrex to kill Fist because Fist was going to work for Saren. If you read the dossier more carefully, SB is actually the one who ordered Fist to kill Tali after getting her information. He just pretended to be upset when she lived.

Yes, you're missing the fact that Tali's email after the fact didn't result in Wrex being sent. You're just assuming that it did for some reason.

I understand that but still the timing is off. Here are the events in order as seen in ME1:
-Shephard and his team go to Chora's Den to speak with Harkin
-Shephard overhears Wrex trying to get in to kill Fist
-Shephard learns about a quarian with valuable information
-Tali finds out the meeting was a trap
-Tali tells SB about the meeting and that Fist was working for Saren (according to the dossier)
-SB is upset, hires Wrex to kill Fist
-Wrex goes to Chora's Den to try to kill Fist
-Shephard overhears Wrex trying to get in to kill Fist
-Shephard learns about a quarian with valuable information
...and it repeats.

That's whats confusing. It's a TIME PARADOX!

Well Wrex tells Shephard he was hired because Fist betrayed SB. Why would SB want Fist killed if he wanted him to get the information from Tali?

He's the Shadow Broker:  Tali isn't the only source of information he has.  It's not that hard:

Tali contacts him.
He sets up the meeting w/ Fist to get the info.
Then he finds out about Fist's betrayal BY OTHER MEANS.
He hires Wrex to take out Fist.
Tali, who has been off the grid due to fearing for her life, goes to the meeting and discovers she's been betrayed, meets Shep.
Later, Tali contacts the SB again and relates that she gave the data to Shep and doesn't want protection anymore.
SB pretends everything's cool and goes on with his information brokering life.

As I said, you're just assuming he had to find out from Tali for no good reason.

Well as far as ME1 the Harkin sequence is actually slightly different than what has been posted:

The initial objective is to ask Harkin where to find Garrus...

Go to Chora's Den
On way to Harkin see Wrex getting kicked out by bouncer
Talk to Harkin who tells you Garrus probably is at the Med Clinic
Go to Med Clinic and have shootout
Meet Garrus and Dr Michel
Dr Michel says the thugs were Fist's men making sure she stays quiet about the quarian. She states Tali had previously come in with and injury but wouldn't say how she got it, then asked her about the Shadow Broker. Michel then states "I put her in contact with Fist. He's an agent for the Shadow Broker."
Garrus "Not anymore, now he works for Saren, and the SB isn't too happy about it"
More exposition about evidence and then Wrex.

Go to Chora's Den, shootout
Confront Fist. He says he set her up a fake meeting with the SB, which is a trap. Saren's men will be waiting for her.
Go rescue Tali.

Now as for the Dossier, I think it is a little odd that the first game actually basically states that Dr Michel was the one who recommended Fist to Tali. So why did she send the message like that to the SB? And when did she send it? Was it before she went to the Med Clinic? That might make some sense except that she should have known about Fist. Michel's conversation implies she did not know about Fist, otherwise she wouldn't have needed the Dr to set her up with him. Alternatively, why would she send the initial message after talking to the Dr if she already had a meeting with Fist? If she was just trying to be cautious, it is odd she didn't even mention Fist in it.

Perhaps the first message was before she went to the Med Clinic, but she did not get a reply. She then asks Michel about the SB and is told about Fist. She then gets the reply from the SB, but then says "no deal." That doesn't really seem to fit with the continuity bc Michel seems to think she went to see Fist after leaving the Clinic.

I didn't look back at the Wrex thing, but presumably the SB already knows Fist is working for Saren.  It doesn't make sense he would be giving Fist instructions if he already knows he has betrayed him.

The Dossier's in the SB base are mostly supposed to be for fun anyway. But I dunno what they were really thinking when they wrote this one.

They either forgot about that line completely or thought Michel had told her a way to get in contact with the SB directly.

nonono, you DONT meet Tali when she goes to meet Fist, you meet Tali AFTER she has met fist, when Fist has set up a meeting, and lied to Tali that she will be meeting The SB himself.
