Hi I have just started to play NWN, I am in the middle of the prison break, and so far I have not noticed anything like levelling up? Am I supposed to do this manually somehow?

Ummm... weren't you taught how to level-up in the Prelude? You should have left that chapter at level 3, at least. 
Unless you started the game with one of those pre-leveled characters, in which case, you won't be leveling up much until later chapters since IIRC the non-Level 1 versions are around Level 15 (best to use with HotU IMO). Also, you wouldn't have gotten "auto-leveled" in the Prelude either.
Otherwise you can rely on leaving Chapter 1 around level 7 or so if you complete all of the subquests and combat opportunities.
