Hypothetically speaking: Say you compliment an Asari you want to date by saying "You have... nice... hair tentacles", not knowing what they were called and she gets offended. Not only because of the wording, but because it's against Asari culture to mention it (again- hypothetically speaking). Garrus does say right after his compliments: "Hopefully that's not offensive in Human culture. Crap. I knew I should have watched the vids."
Ignorance doesn't equal apathy; Phsyically or mentally.

Wait wait wait...Miranda's face is manly? I mean yeah, her jaw is more rounded than usual for most women and her chin's a little bit bigger, but her face isn't really masculine, especially not with the other features on her face.
Anyway, Tali's character is about everything that isn't the physical. Mainly personality, but also voice, and other abstracts are what defines her, not her appearance ("No one would want to court a girl with chicken feet" as BW once said), though it sure doesn't hurt.

Garrus is attracted to Fem Shep, just not physically. He's attracted to her because of her personality.
It isn't just that Garrus stumbles over his words while trying to compliment Fem Shep, he compares her to Turian females and highlights the differences. Even when Shep first comes on to Garrus, he replies by saying there is no one in the galaxy he respects more than her. He doesn't say she's beautiful. Later in dialogue he also comments and how interspecies romances could be 'awkward,' and says he doesn't have a fetish for humans.
Although I don't play as Fem Shep, and was against Garrus being made romanceable, I did think that was a nice touch by Bioware. Humans shouldn't be physically attractive to Turian eyes, and thankfully appearance isn't what draws Garrus to Fem Shep.

No disappointment from me. I think the Krogans, Turians, or Drell are all ugly, but they still look good because of the detailed character design. As long as the Quarians are well-designed, it really doesn't matter to me if they are "ugly" in the wow-that's-a-weird-alien kind of way.
I'm not a fan of Tali, so I don't really have any expectations on that front.

I will probably be romancing her just to find out what happens, like I did with Jack. Don't at all find Jack attractive, while others do. She scares me, but I still wanted to see what would happen so I tried it on one of my male sheps. Just cause.

I thought the same thing in that dialogue after recruiting Garrus.
Shep: Hell Garrus you were always ugly. Slap some face paint on it and it'll look good as new.

Garrus wasn't physically attracted to femshep, he has no fetish for humans at all. His entire relationship with femshep revolves around respect. It might grow into something more in ME2, but for now its a respect based fling.
This actually brings up some cool questions about relationships in turians. They have little regard for art, respect craftsmen, military is completely tied to citizenship, apparently relationships can be respect based. Very cool.
