Morinth disabled all of Edi's equipment that was monitoring the room. Morinth could then go out andmind control her way off the ship.

Think about the situation. Morinth can mind control Joker and tell him to go to Omega if they aren't already docked. EDI doesn't have full authority if Shepard isn't in command.
Actually she could dominate Miranda who is the XO. Miranda can get Morinth off the ship.
