Riiight because all the other parts of the ship are not monitored, and because Edi can be mindcontrolled.
And doesn't Edi just have Sheaprds life signals?? Anyway? Even from a long distance?

Remember, Morinth melds not just for the kill, it's for gaining that person's essence or strength. Shepard is a once-in a lifetime meld.

Morinth went on Shep's suicide mission because she's really old and figures "eh, if me and him survive, I can get a HECK of a meld out of him" or "well, it's been a good 400 years, i guess this is the end of the line, at least I got out like a champ"

Well then for her plan to succeed she needs to wait longer and get off the ship. And since she didn't do that, I assume that wasn't her plan at all.
