The graphics options screen is made up of a detail slider (low, medium, high, very high), antialiasing settings (off, 2x, etc, up to whichever your card supports), texture detail (small, medium, high), vsync enable/disable, resolution, fullscreen gamma, and an option to enable or disable framebuffer (post-processing) effects.
Yes, there is an option to disable persistent gore.
