Depends on what you like really, this has no real character interaction, story or decision making, so in that regard obviously Skyrim will be better, combat can be debated, and the world, well we will have to see what Skyrim's like when it comes out to judge.

And on the 360, if you are in an Xbox Live Party, you'll still be logged in, but the game itself won't be considered 'online'.

So, at least you can do something about it. I also noticed, in addition to the bonuses of choosing a specific stat, every single defense stat is increased by 1 when you level up. So, I'm not AS concerned with trying to raise VIT as I was before.

If anything, Dark Souls reminds me of an old arcade game or an old NES game with the scale of a modern game. What do I mean? Well, old games involved a lot of repetition. You play for a while and clear some stuff, and you die. And then re-clear all that crap again to get to the point you died at for another chance.
That's just the way games were. They were cartridges so they needed the repetition to make the games last longer. And arcade games needed limited lives to make you spend more quarters. I never thought it cool though. As soon as save-your-progress RPG's came out, that was pretty much it for other genres. I don't mind a challenge. But I like to get directly to it and not have to reclear stuff again to get back to what gave me problems.
In Dark Souls I feel like I have to reclear crap pretty often. And so it reminds me of an old game in a bad way. Now I'm not saying there should be a save-anywhere option. I think that would destroy the game as it seems to be attrition-based. But I don't attrition-based challenges either. I like to regen health between battles and for every battle to be balanced on that assumption.
So I don't think Dark Souls is bad so much as it isn't to my tastes. It's definitely "old school". Is it hard? Eh, kind of. Sometimes it is. But you can figure it out. Is it punishing? Not really. So you lose some souls or humanity. Whoopty-doo. It isn't any big deal. It's nothing to stress over.
So I kind of feel drawn to revisit the game. But not entirely sure it's worth it. If anything, it's reinforced what I decided I didn't like about 8-bit era gaming: reclearing content.
So, on that note, Skyrim just can't get here fast enough.

But I'm having fun. I am on my 5th character, well technically second where I'm actually seriously playing. First three was to check some things out.
I am level 16 now with my Warrior and this is the game where losing a lot of progress will really ****** me off. But at least I'm smart enough to know I shouldn't go into the unknown while holding on to a large number of souls.
Also, there's some places you can grind when you get further, but it takes a while to get there. Especially if you're like me and it's somewhat luck as to whether I can get past something.
I know I have to kill the Taurus Demon to do what I want to do, but I'm just nervous. That's because I killed it with my Thief and then got the Drake Sword and went back to the previous bonfire. Then I tried to fight the Boar and I do it, but I die before I can get to what I thought was the next bonfire because I ran out of flasks.
Though this time, I have received a total of 4 Humanity and I used two of it to kindle the current fire I'm at, so I'm more prepared now than I was before.

i am level 66, 35 hours in and maybe 2/3 of the way through the game

I need higher stats to get through stuff, the longer a battle takes, the more I mess up and it doesn't take long before I start messing up, maybe 5 minutes in for a boss and most bosses take more time than that.

I spent a good hour or so in the creator trying all sorts of things, until finally settling on a version of me that looks fairly close to my avatar face. So of course I finally get in the game to learn I'll spend the majority of my time with my skin flayed off. The frequent death rate combined with the infrequent humanity gains pretty much insures I won't be seeing my face much.
I must admit they got me pretty good there. Bastages.

I was unhappy with my last and just today admitted it to myself. Any body type other than Slim or Very Slim for a female character I realized looks horrible. I also wanted to change my class.
If I could compare it to something: I'd say it's like NInja Gaiden II on Mentor or Master Ninja, but you have limited stamina to perform actions. Although there is one difference: you can actually try and pull enemies one at a time.
