If they gave us a chance to cheat on our LI in 2 or bounce from one to another, I'd say there's a good chance for it in ME3 as well.

I really hope this is possible! Though, new ME3 LI's might just reject Shepard outright if he/she already has two love-interests (I can see Bioware writing in a "you have too much on your plate already" game mechanic) but if a straight male Shepard can ditch Miranda and Liara for a new chick in ME3, I don't see why he couldn't just as easily ditch them for a man instead.

Since everyone can have his/her own canon - why shouldn't it be possible? Some ppl need some experience with the other sex until finding out they're gay.
My "canon" Shepard (= primary Shepard) is straight, faithful and won't change in ME3. So basically he sticks with his original LI from ME and is going to continue it in ME3. Most of my other Shepards are basically the same, but who knows? Maybe one or another will break up with old LI.
