I am in chapter 6 and don't want to beat Irenicus just yet, since I'm trying to do all the side quests first. I beat Bodhi as soon as I could at the beginning of chapter 6, which was like 50 days or so ago game time.
I originally met Drizzt and his friends just after I met Elhan, on my way to Athkatla to fight Bodhi. Drizzt aided me in fighting Bodhi, and I ended up killing him so he wouldn't kill Bodhi and get all the experience.
Anyway, its now like 50 days or so later and all of a sudden I met Drizzt and his friends again, as I did before, in between levels while traveling between DeArnise Hold and Athkatla. They had the same dialogue they did the first time, so it was like we'd never met before. I haven't been back to the Graveyard District since then, and I didn't ask them for help this time since Bodhi is already dead, but since I met them I am now wondering, will major plot developments like Bodhi's death undo themselves if I put off doing the quest for a really long time?
Also, I didn't do it, but will changing to an earlier chapter in Shadowkeeper undue plot developments, such as Bodhi's death and freeing Imoen from the Asylum that happened since then?

If I delay doing the main quest for long enough, will the game forget I have already done components of it?

I've never known plot elements to "reset" due to spending time doing anything else. Chapters 2 and 6 are traditionally the two points where you are free to go off and do whatever you like (aside from, possibly, maintaining your stronghold). If you've encountered any type of "resetting" it may be a glitch or due to mods that you may have installed. Can't tell you whether the Drizzt one falls into those categories, since I never killed Drizzt in my games that I recall.
Don't mess around with the Chapters; there are so many variables associated with the plot (and all sorts of other things), it's not possible to just reset everything by changing the chapter number. Though, there are plenty of people around that have done a much more extensive examination of the variables and their effects. I'm sure others will have varying opinions on the topic.

No. IIRC, this encounter repeats because they didn't have a way to turn off random encounter areas and they used a variable for spawning Drizzt and his group that doesn't get stored (random encounter areas aren't saved like normal areas).
I believe we do something in the G3 fixpack to make sure you never get Drizzt again; in any case, just ignore them if you see them again (or kill them or whatever).
