No seriously, in my ending I want the reapers to win versus the galaxy. The final mission will be one last heroic standoff on the Citadel, as Shepard and his remaining two squadmates prepare to seal EDI away, so that a message for the next galactic race to prepare themselves can be given. Just as it finishes, Shepard and his squadmates are killed.
Cut to tens of thousands of years in the future. A strange-looking alien, with silver horns and skin, seems to be investigating this area of the citadel, when he comes across a sealed vault. With a touch of his hand, it opens, and th message is relayed. He is sprinting away as the message plays, and it cuts to him showing EDI to what looks like their leaders. Then, cut one last time. The Reapers arrive, but this time every cannon, every weapon of this strange race is aimed at them. The entire Reaper fleet crumbles to dust in the sky, beause they were not prepared for true warfare.
Then, we see a massive silver statue of Shepard in the center of the Presidium, while other creatures run about, some stopping to bow to it. There is a plaque at the bottom that reads, in their strange alien tongue;
"We do not know who you were, but you are the saviour of all galactic life today. You will never be forgotten. May you rest in peace, Commander Shepard."

Paragon Shepard always seemed eager / interested to help people with their problems and even day to day "small stuff"... I think my Shep would make a benevolent leader of some sort, perhaps as a governor of a small colony planet, etc.... She'd be busy taking care of "the little guy".... so long as there weren't any big galactic threats again, naturally.

That would actually make for an interesting ending.

Shepard, after leading the galaxy to victory over the Reapers, marries Ash (elaborate ceremony - for Ashley's sake). He will also continue to captain the Normandy, with Joker at the helm and the rest of his surviving crew, for several more years cleaning up pockets of resistance before retiring to an undisclosed location to raise his family and enjoy the peace he and his crew so heroically fought for.

Wow, that would make for a seriously awsome bittersweet ending!

The Mindoir/Sole-survivor would have to deal with the aftermath and chaos of reestablishing a government. Even if the Council survived, there would be a power shift with such massive casualties. And if civilization was able to pull itself back together in Shepard's lifetime, she could never truly retire in peace having lived most of her life in conflict, struggle and pain. The friends she lost, the sacrifices she made, the inescapable infamy that would follow her with every enemy she made and there were enemies made in high places.
Unless she stays with the Alliance and continues doing missions for them, likely she'll just disappear off the grid. Until some other government or organization hunts her down for their own needs.
As for the Spacer/Torfan butcher, she'd become a pirate or a mercenary, up to any challenge if the price is high enough.

If that sounds trite to you, believe me, I think so too. I'm not a let's-play-house type of a guy in the least. But realistically, when you get to a point in your life where your work is no longer what fulfills you, your next interest is passing on to the next generation. I do think that my Shepard would want to leave military behind after ME3. He used his talents as a soldier to do the greater-good, but wouldn't want to become like Zaeed or Thane and kill people for business for the better part of his life.
As a Shepard from the Earthborn background, I think Raas would adopt. He knows Earth is already populated enough as it is, and there are many orphans out there in need of a parent.
No doubt Jack becoming a mother would be a scary change, but that's part of the fun that comes with it I guess -when you're no longer the center of your own universe.

and i imagine shepard retiring or taking a more stable vocational job (does it because he wants to help) and settling down and potentially having a family and marriage with hopefully miranda.

Spacer/War Hero male Shepard will throw his lot in with anti-Hegemony freedom fighters.
Earthborn/Ruthless fem Shepard will kick ass in the intragalactic biotiball circuit.
