Not looking for anything crazy like solo nightmare, was just gonna do a Rogue playthrough with only me and Isabela and am looking for what you guys think is gonna be able to do the best. I have messed around with pure Dex builds for all crits and fast takedowns and all CUN builds for crazy high DEF and whatnot.
This is just for a Hawke/Isabela duo on Normal or Casual, what is the best wa to go so my Rogue won't die in 2 hits when it comes to fights where there are 100000000000000000000 archers pouring it on us? aka almost every damn fight in the game, what's up with that btw?
Rogue build for highest survivability?

So it seems with Parry from the Duelist tree, and the upgraded +20% passive, I can hit the 80% normal mob cap pretty easy, with about 30-35 CUN. That it seems helps to get rid of a lot of incoming damage from normal mobs when I get into large fights.
Anything else I should be really doing? It seems there is really no way to balance this out, and I am stuck either being a high crit quick kill machine that can't take more than a few hits, or a CUN monster that can stand toe to toe with mobs but hits like a wet noodle therefor dragging the fight out so long that I still end up taking a bunch of damage anyways ergo negating the DEF I have amassed.

Just go shadow and use decoys etc. You can get obscured (+50% defence), redirect threat, and gain +50% critical damage. You'll probably have a harder time keeping isabela alive though. In any case, the build for the best survivability is the build that kills them the fastest;
For the first few levels (up to the middle of act 2) just pump everything into dex because you want your critical chance to be ~100% so you can get your critical damage% into action. Dex is much superior damage-wise as each point increases your base damage quite a lot (proportionately speaking).
At later levels, once you have ~90-100% critical chance it's better to pump cunning, especially if you're an assassin with devious harm. A late game DW min-maxed for damage has lots of defence (not that it really needs it).
If you're on normal or casual you shouldn't find anything too hard as long as you don't waste any points on constitution/willpower etc and put it all into some combination of dex/cun.
Check out my solo DW guide maybe; it's for nightmare and doesn't really cover Isabela but should give an idea of how you could do it

Do what mr_afk said, this man speaks the truth.
Another good thing would be avoiding lvlups, this way your armor rating would be sky high and no archer could scratch you. I'm pretty sure (to lazy to check) mr_afk covers this up in the guide he mentioned.

cc flasks, fog, perma-obscure, stealth, decoy, incons, bombs, really high dmg attacks, fast autos....can't think of any reason to die quick.
