The low resolution of textures is one of the two main annoyances with ME1's and ME2's visuals. The other is the harsh black shadowing that make characters like Miranda fall into the Uncanny Valley at times.

Where did they say this? If the consoles are getting high rez textures for a visually advanced game like BF3, then there's no reason why the PC shouldn't get high rez textures (which we've been asking for forever!) for visually mediocre games like ME and ME2.
I doubt the consoles can handle high rez textures for ME and ME2 though. It would cause lots of framerate issues and texture pop in due to the small memory capacity.
It will be interesting to see how BF3 devs get around the memory limitation issue on the consoles if they really plan to make high rez textures available..

Intel i5 650, 3.2ghz
Currently, I am running ME2 on max settings and 1600x1050 resolution (my PC can't handle full HD).

Battlefield 3 comes on 2 Discs for 360 and if you have both installed, then the game runs a high res texture pack. The second disc is the campaign and the first disc is the multiplayer and texture pack, install both and it runs. (The game has a required install on PS3 and PC, so it is automatic, but the option exists on 360 if you install. Not sure why anyone wouldn't install as it is the smoothest way to play console games.)
Perhaps ME can set it up for download or release a collection before ME3.

High-Res textures would be very welcoming for ME1 or 2, certain environments like floors and pipes which are stretched look horrible.
Case in point: img94.imageshack.us/img94/2584/masseffect2201107170221.jpg
The other main problem I have would be the whole body/head resolution issue.
