BGT -- I read up on both and I decided I liked the continuity you got from this over Easy Tutu better.
BG1 NPC project More banter, yay!
BG2 Fixpack (I assume this is the best one?)
BG2 Tweakpack For a couple of things like bags of holding and stacking more ammo. Will ignore most of it.
Widescreen mod For obvious reasons.
Fixed Sewer Lighting It says it's also compatible with BGT.
the Bigg House for the "Drop Weapons in Panic" removal to potentially eliminate massive amounts of nerdrage (I'm not always that observant).
Moinesse's Avatars Long hair, yay!
1PP v2 (Assuming it's compatible with Moinesse's Avatars)
Ascension Read enough to realize it introduces some non-combat resolution options...sounds great. Plus it's Gaider.
Unfinished Business 1 and 2. Restored content!
Ultimate Portrait Pack More choices is a good thing!
and POSSIBLY:
Infinity Animations. Cooler animations are...well...cool, but I want to see the originals before I decide.

Edit: You can use the Wheels of Prophecy mod to alter ToB a bit.

If you say it'll still probably be out of my skill range, though, I'll take your word on it.
EDIT: And how does this aTweaks stack up to the tweakpack I'd listed up there? Finished the FAQ, it looks like aTweaks suggests using the BG2 Fixpack but says nothing about that other Tweakpack.

the first two will help avoid unexpected game issues, the animation and sound options are for avoiding irritations (most players find that sound and the animations to be highly annoying), and the no drow avatars helps avoid a lot of bugs in a certain area. I know that was kind of spoilerish, but if it were me, I'd rather have had that option set and know that tiny detail than get caught in a bug rendering the game/an NPC unplayable (plus if you're looking through the readme you'll see it anyway).
other than that your list looks like a good way to experience the "vanilla" game.

By the way, take a look at this pdf. (don't read it all) It says it's Big World Project, but it also offers a rather extensive list of mods + order of installation (and compability).
The only error I could find was that they want to install certain parts of Rogue Rebalancing after aTweaks (which the creator warns against). Even so, it's an easy and relatively safe way of creating your installation order.

@Dante: Annoyance removal is good, lol. I remember one soundset you could choose for your PC in DA:O that made me want to throw my monitor after it repeated a few times.

The default AI seems a little derpy, so I was looking into downloading some scripts to make party members feel like less of a drag and more of a help. I'm assuming I want BG2 scripts because, while playing BG1, I am using BGT.
Here are a couple I found. Opinions?

a few miscellaneous here, hard to judge
...and not party-related directly, but gMinion looks really nice for summons.

SCS (G3 site's down at the moment, hopefully not for long) has a prep script for casters to precast most of their long duration buffs, which are somewhat tedious to renew one by one.
I wouldn't trust any script for use in actual combat though, as the computer can't prioritize things as well as a human player.

I have heard good things of gMinion (it was always annoying that fire elementals turn hostile from fireballs), Spell Revisions summons behave much the same way, but the changes are more radical.Sarielle wrote...
I don't mind pausing and micromanaging when necessary, but right now "necessary" seems to be "all the time," lol. Thanks for the tips about Sorcerer's Place...I don't have SCS installed actually, my first playthrough and I don't want to make it extra hard on myself.
I take it you haven't used those other scripts?
I have tried and can recommend "Smarter Nymphs" from Tactics, probably the only component of Tactics you'll want to use for now, makes summoned Nymphs more useful.
The nice thing about SCS is that it's modular, you can install only the ease-of-use AI and the bugfixes for dispel magic/mirror image if you want... Except that the most recent versions package ToBEx which is currently in beta testing and has some bugs, v15 is the latest without ToBEx I believe.

If you decide to install it, you do want at least the "Smarter Yaga-Shura component from SCSII, which fixes a certain ridiculously annoying bug.
