Any idea how long it takes to do the same in Skyrim?
At the pace of a walk (character movement is running), it would take much longer than that.
Size isn't everything..
The density of details/things to do will be the most important factor in determining the duration and enjoyability of exploring in an open world game. Skyrim was pretty good in that regards - no matter where how far into the wilderness you went you would still encounter new locations/environments (cities, bandit strongholds, caves), as well as the occasional side-quest and easter-egg.
Although the variety of enemies/environments did eventually get a tad repetitive (after several hundred hours of gameplay), this aspect meant that exploring or 'walking around the coast' involved more than just been able to walk large distances, but rather the potential to be an adventure on its own.
I'm not too sure how dragon's dogma approached it, but based on what has been revealed on the interactive map (fb app), there should be quite a diverse range in locations:

Dragon's dogma also has an advantage in that the night-time should be drastically different from the day-time. This adds a bit of time-pressure on exploring and basically gives an extra version of the environment to experience. I haven't looked into the details of the locations yet, but I'm hoping that there will be a few central hub cities with different atmospheres/architecture/people (as they are the safe points from which to explore from), and more than a few side-areas/dungeons to explore on the way to the more major locations..
