Don't turn this into a flame-war of what an RPG is, etc. All the OP is asking is ME1 worth playing and the most of us are saying yes, it's worth it.

Point-based Non-combat skills (Decryption, Charm, Intimidate). Granted, they're much more simplistic than other RPGs, but still not as streamlined (or nonexistent) as in ME2.
Weapon and armor mods.

^this. Played ME2 a bunch of times, then got and played ME1. Combat in ME1 is terrible compared to ME2, but you will enjoy the story and realize why its a shock Shepard is working with Cerberus in ME2.

are you saying the fact that most classes carry less guns or the actual number of weapons you can actually get? because if it's the latter, then well, in ME1 there were like two gun designs and about a million retextures whereas every gun in ME2 was different and far more distinctive.
interchangeable weapon/armour mods removed
ammo powers fulfill pretty much the same purpose as weapon mods, and things like tech armour, GSB, fortification and barrier are quite similar to armour mods considering all four of them boost your shielding/barriers just like the shield modulators did in ME1.
grenades removed completely
tbh, personally I hardly ever used them except on Feros when I used the anti-thorian gas. besides, grenades are coming back in ME3.
reduced abilities and therefore character development while leveling
what do abilities have to do with character development? that's like saying if you romance Miranda her character won't actually develop as much as if you say, romance Ashley in ME1 because Ashley had more abilities available for you to level up. what?
all ME2 did (and it's one of the few cases of streamlining I actually approve of) was get rid of a whole load of pointless powers and made the level-up screen far more manageable.
a general nerfing of all classes

Nerf - To make worse or weaken, usually in the context of weakening something in order to balance out a game.
no, classes were not weakened at all. hell, vanguard was pretty heavily buffed in ME2 with the addition of charge so now you could shotgun guys to the face for one-shot kills. the only nerfing that really happened was in order to make the game actually balanced since ME1 biotics were just overpowered like hell. getting rushed by a load of krogan? slap a singularity in front of yourself, they'll all get sucked in to it and float. no singularity available and enemies are clumping up though at a distance? well, just use lift. they'll all just start floating making them incredibly easy to kill.

and how does that mean ME2 has less RPG elements? it's meant to bridge the time between ME1 and ME3 so Bioware can't go round making decisions from ME1 have a mass(ive) effect (excuse the pun) in ME2 because all that does is make creating ME3 an absolutely torturous task having to accommodate to massively different world states. in ME3, the things we've done in the previous two games will all come to fruition and then Bioware can go all out by letting us make the truly masive decisions that affect the state of the galaxy during the game and post-invasion.

They want to attract new customers, so of course they're going to say ME3 is the best place to enter the trilogy, because "In order to buy out $60 - $80 dollar game and enjoy it you need to plunk down money on the previous 2 and burn 70 hours to finish them" won't sell games. Bioware is a company, it's their job to make a profit. Contrary to popular belief, that's not a crime. As to the "stripping of RPG elements" Inventory systems like ME1's are a horribly dated, annoying mechanic that's carried over from the Random look tables of AD&D, and wasn't fun then. I've been playing RPG's, both computer and Pen and Paper for twenty-five years, and have always found it a lot more fun when I could play the way I wanted, instead of breaking out a spreadsheet every time I killed a mob to see if the random crap filling up my inventory game me an additional point of damage an hour. The inventory system as implemented in ME2 let me spend a lot more time enjoying the actual game play and the story, and a lot less time at the vendor selling crap, or on the inventory screen converting it to omnigel.

And, really, why would you burn time WATCHING ME1 playthroughs on Youtube when you could play the game, make the choices, and explore the universe yourself? If you're frustrated by the combat, scale the difficulty down and burn through the gameplay segments.

Systems like ME1's, you say? What was stopping Bioware from fixing the inventory system, and updating it, instead of removing options for customization?
As to them "not" stripping the RPG systems down, Bioware has already conceded that they went too far with it, so the argument is moot. Bioware DID strip away too many RPG elements according to the opinions of many fans and critics, they've accepted that criticism as an error on their part, and they're working to correct it for ME3.
And traditional loot/inventory systems are not outdated; they're basically a collection interface where you can view your belongings ingame, and use items as you see fit to solve the problems you come across.. Ask Minecraft, Borderlands and TES fans whether they'd rather have their inventory removed from the game. I doubt it'd go over well, as those games are practically married to traditional inventory, and they're not at all outdated.
