I've played through a few of the classes but i can't seem to find one
than i can't truly sit down and play as for long periods of time wthout
me getting bored. Any suggestions?

Rogue was always my favorite in Origins. It always seemed more fast-paced than the other ones. I got the least bored with it too.

I enjoy the challenge of building an archer (arguably the weakest class in the game). But mages can be fun, too -- all sorts of spells to play around with.

Here's one I had fun with. It deals good damage (not the highest, but good damage), and it's insanely hard to kill:
Max dex DW rogue: 22 cunning for the top level of stealth. Enough strength to wear the best light armor. Everything else into dex. As a rogue you always have a bag of tricks. You can open fights stealthed and annihilate annoying mages for example. Because you have high dex, you won't get killed half as easily as a cunning rogue. This build is good for backstabbing, but it also works in a fair fight.
Alternative suggestion: Pure strength 2h warrior. You can invest 1 point into cunning if you are not a human (so you will get 16 total for Coercion in the Fade). Everything else into strength. You will be bored at first, but about halfway through, things will just start dropping dead the second you start the fight.

I second pure strength 2h warrior. The base DPS is worse than for dual-wield warriors, but with good timed talent spaming the damage is nice (sunder weapon / armor actually make two normal strikes, fit them in between normal attacks) , you are always occupied (well, with spaming talents, but better than doing nothing), "Indomitable" makes you immune to stun and knockdown.

Arcane warrior was fun. you could just pick your three favorite companions and make a character suited for the party.
