Anyone know of any good birds? Preferably flying. Or is that beyond NWN2?

There is a placeable that came with Storm of Zehir that has flying birds. Also there is a flock of swallows on the vault too. There is a swarm of bats on the vault too, if I recall properly. There are also visual effects of a raven, cockatoo, and toucan.

If you're talking about birds as creatures, then no, not really. I spent some time looking for any that might fit the bill (sorry, couldn't resist!) for a major PW project but never found them.
There have been some discussions of this in the past but I don't believe any modeler has taken it up. I don't think it's technically beyond NWN2; after all, there are flying models for imps, pixies, and the like. The animations would probably take a good bit of work, though, since you'd have to do the idle flapping and so forth.
There are ground birds in the stock game that are not particularly convincing. I think they might be called ravens but they look more like sparrows to me. Other than that, it's VFXs, as M. Rieder mentions.

The problem with birds as actual creatures is that nothing can actually fly in the game (that is, defy the walkmesh and cross otherwise non-crossable obstacles). Even bats, imps and mephits can't fly over the narrowest of chasms, or the shortest of placeables, that block earth-bound players.
Storm of Zehir has a flock of seagulls placeable (the animals, not the 80s band) who endlessly wheel about. Doing something similar with vulture models would be a great way to guide players during a 'find the corpse' quest.

You could get fancy with the vfx's, some collision boxes, and the vfx flyaway animation to give the appearance of a bird that flies away from you when it is disturbed or something, but beyond that, there are no flying creatures in NWN2..... unless you look at the flying animations on youtube, but there are still the walkmesh constraints.

I have "re-texturing the flock of seaguls" on my to-do list to achieve exactly that. It is WAY down the road for my own interests, but if enough people need such a thing I might give it a few nudges up the list. We're still talking about late December, early January though. Not to mention that I'm counting on the fact that the placeable uses very small models, so it shouldn't need extremely detailed work from my part.
I'm still game though. It just depends on how many people actually need such a thing (In my case it's just a nice touch I'd like to have, which is why it's not a priority)
