What exactly do I have to do to have Kelly feed my fish? I accidentally missed the chat with her after recruiting Samara, because right after the Justicar mission she talked about Grunt. Will this mess up the romance plot?

Sure, if you don't mind not getting the Paragon Achievement (Which probably means the romance itself won't be taken too seriously.) and all together having a very.... Vague and unfulfilling relationship.
Honestly, I don't wish to smear anyone's idea of a good time, but why is she so popular? Aside from possibly living out the "Seeing the secretary" fantasy, what point is there? She has no backstory, no mission or deep dialogue choices, not even and engaging personality. She's just.... There..... Its creepy now that I think about....

I kind of agree. Shepard's flirting with her is also very awkward, seeing how s/he does it on the bridge and uses some terrible lines.

Kelly is a lawsuit waiting to happen.
That said, I am fairly certain you can romance her and still get the paragon achievement. You don't have to have only paragon points to get that one.

An additional question about Kelly.
I got this diner with her and she is feading the fishes. To go on, as far as i know, i can't have an active romance to get the message from her after the suicide mission. Has anyone testetd how exactly i have to fulfill these condition?
Is it possible to have a romance (with the romance scene in the omega jump), ending that after the suicide mission and then get Kelly's invitation?
With the other romances it is possible to switch romance after the normal ending of the main play.So i hoped it would be possible with Kelly too.

No, its not possible. If you get the O4 relay scene, you cant get a lapdance from Kelly.

You erred. I tried this evening and to my relieve you can
- have the O4 romance scene
- end the game as usual
- play on
- end all romances (i had Miranda in romance, Tali + Jack in the challenge phase)
- have Kelly's dance
- have the O4 romance scene
