I never could figure out how to keep the generic speak trigger to keep from playing the greeting. I ended up just making my own speak trigger script, but I am curious. Does everyone just re-write it, or is there a really easy way to keep the greeting from playing that I overlooked?

Speak triggers are just a specialized generic trigger that takes away your control. I never use them, I just use generic triggers.

If the NPCs you are talking to are never going to be companions, then you can simply not give them a soundset. If you don't want silent companions though, you'll have to re-write the speak trigger script for them.

I'm really surprised that the default speak script doesn't have an option to turn off greeting. I guess in the OC if they didn't want a greeting, they just assigned the convo to an Ipoint.
