Unfinished dialogue would be udina voicing one of the characters from the intro, not the 7 minutes full of automatic dialogue from Shepard. Do you honestly believe that in the final game those 7 minutes in the video will include dialogue options?

Nowhere in the video, or article, did they show or mention that the intro will be the same, or different, should you chose one of the other modes.
Its a beta demo. You can even see that in the way the shuttle craft at the beginning lacks textures, Andersons lips not moving with his VA, the way Anderson and Shep "shoulder" their way past people when there is noone there.
By all means, leap to conclusions based on incomplete data. After all, it only serves to frustrate you, and not those who actually have the common sense to accept that they are not seeing the complete picture.

Wait a second Dafoe, I was referring to the scene with Joker and the Normandy SR2. In the intro with the normandy's destruction, you get dialogue options.

Just because some of the dialogue is automated doesn't mean that all of your roleplaying up to this point has been eradicated.
And honestly these auto-lines are pretty well writtten, not to mention that if you actually got the dialogue wheel in some of these scenarios it would be mostly superflous.
Vega: "Commander."
Dialogue wheel pops up:
- "Please don't call me commander anymore."
- "Your not supposed to call me commander anymore."
- "Don't call me commander anymore."
- Inestigate: "What's a commander?"
