Yeah, it's pretty crazy how two of the only characters to have major roles in both the earlier games aren't pushed off to the sidelines in the third. After all, since ME3 is the "perfect starting point", they should just introduce two new characters instead, and dump the only people who have remained at Shepard's side throughout the trilogy thus far.

That's like saying that Frodo had enough time in the limelight in The Fellowship of the RIng and The Two Towers and replacing him with Pippin for The Return of the King. It's just silly.

They can die just as easily as everyone else.
Except Miranda with her dialogues.
Plot armor would be a more fitting description for the VS' situation, since the plot actually demands those particular characters' preservation for a future point in time.
As you said yourself, those conflicts in ME3 can probably play out fine without Tali and Garrus.
Does that make them worthless? No, because they have individual characters people actually like and some situations can play out differently depending on those characters' survival.
