Mass Effect is secular by necessity: Since none of the Earth religions mentioned Citadel Council, Mass Effect technology or Reapers, people like Ashley Williams are considered weirdos.

For human religions, there is Ashley and that reference from the asari customs officer "You can't even sort your own religions!". However, most games, even ones set in a modern or older setting don't bring religion up too much.

Because of how religion is severely ingrained into US politics, it will just end up the same s**tstorm, only with justifications of war included.
Also, as Didymos pointed out, a lot of them are mentioned. After the discovery of the Prothean ruins, I'm guessing a lot more people started buying Nike runners and drinking funny tasting punch.
