As the title says, is there a great benifit to buff up DEX either through leveling or equipment to increase crit hit % or should a 2H solely focus on strength only?
Should a 2H warrior bumped up DEX for CRIT HITS?

in terms of pure dps you should aim at full strength, so moving to dex after reaching 100 strength; or a strength/willpower mix for a berserker
using crit-gear and/or +%elemental gear alongside that will maximise damage.
this is to do with the way that actual critical damage isn't high enough to warrant focusing on critical chance (as their base damage and critical damage% isn't that impressive)
increasing base damage increases both actual critical damage (so crits hit harder) and general damage.
A late game full strength warrior can have ~80% critical chance and a fair amount of critical damage% by around level 24 if I remember right.
Just focus on getting 'the puzzle ring of the black fox', 'four-fingered eddie's lucky talisman', and the seven deadly cinch (or the wyvern hunter's belt). The other slot for the ring can go towards critical damage%, with the graven circle been the best and the etched ring of the twins a reasonable alternative.
In terms of armour, the item packs have some pretty good +critical bonuses, but if you're using an elemental setup the robes of unblemished cleanliness (and the ring of the ferryman) can be better.
The last thing to consider is maybe using bravery. It gives a fair amount of +%damage and critical chance when you're surrounded by enemies - since ideally you'll be drawing loads of threat by the damage you deal you'll have enemies lining for you to kill (and to give bonuses to your damage).

I try to bump up Willpower on a two- handed guy for Beserker but I don't know the mix of Stats.

Pump enough strenght for a decent attack rating (100% vs. normal enemies), put everything else into willpower.
