I have talked a friend who has enjoyed the Elder Scrolls games to buy Neverwinter Nights. Would coop in the OC be a good way to introduce him to the game?

I would say so, having introduced my MP partner to the game that way. She and I still play, so I consider it a success. Then, when you finish the OC and s/he has the impression that the game is always easy, MP through some of the vault modules (e.g. the Aielund Saga, which is a very polished mod), many of which are more challenging than the OC.
