Ever since I saw that movie as a kid, I've been convinced that Cale and Akima have the best hair ever.
IN ADDITION, I'd like some curly/wavy hair for both genders. Also the new femshep styles they showed off. And something sleek and slicked back for broshep.

I would like to just see hair that is animated as competently as they did for Saints Row 3... it's not stellar or anything, but it looks and feels right at least... it's just not "bendable" material like in DA2 (nor that criminal plastic helmet hair of ME1 & 2)... but it moves freely as real hair does generally... so I hope they can implement that in ME3.... small thing but it does make a big difference to immersion.

Long hair for guys probably won't be possible since Shepard is in the military, however awesome it would be. I would like an option for longer hair for females, BUT an alternate hairstyle during combat or casual situations (relaxed hair on the Normandy, hair pulled back during combat, and maybe a dressier style if there's a mission similar to Kasumi's loyalty mission--probably not going to happen though, saving the galaxy from reapers and such....).
