I have recently completed Mass Effect 2. I discovered that I had not
completed all of the missions, especially those that come from DLC
packages. I want to do them and have that reflected in my endgame save
that ME3 will load variables from. Is it possible for me to play after
the suicide mission and still have those mission outcomes reflected in
my ME3 playthrough? I asked EA support and they weren't able to comment due to my question centering on an unreleased product.

I would appreciate any insight people here have! Thanks in advance.

Yes, you should be fine to do that. ME2 doesn't actually generate an endgame save like ME1 did, so ME3 will likely import from a ME2 save that you select. (I'm guessing something similar to DA2's importer, if you've used that.)
