The leaked Demo has a lot of missing art. The Demo and some of the files may be layed out early, but that doesn't mean the file timestamps are all going to read the realease date . . .

I once bought a demo of a game on a disc. I bought it with the impression of it being the ful game but it was its demo and I gave away my money for a demo.

Audio, animation, and generally bug sweeping needed to still be implemented.
Also, that's concerning just the single player portion of the demo. BioWare needs to be sure that the servers will be ready when the demo goes online.

devs: when the demo comes out will it be like the demo for me2 where your save will be able to be loaded for me3? if so can we load all of our saves and have multiple saves so when me3 comes out we will already have all of our playthroughs started?

I can appreciate and understand all the hardwork and what have you that the ME3 Dev. Team is doing, (the game is looking fantastic). However, I'm starting to become concerned with the nature of what's being said by certain members of BioWare. We're being told "A" when it turns out to be "B". I'm not saying we're being lied to but a little bit of humility, honesty clarity etc..., with regards to certain issues would be nice.
E.g.
Monday - BioWare Community Manager "Yes we'll provide more information on that issue on Wednesday..."
Wednesday - No news/updates etc..
Friday - BioWare Community Manager "I apologize for not delivering on our earlier comments, there we're various technical issues that disrupted us from addressing said issue. We are working to fix the problem. We will do our best to get back to you at such and such time regarding this issue etc..."
People would be surprised how far a little bit of humility, honesty and straight-forwardness will get you.
Just my two cents,

You sir, are probably correct, but i would bt more around the 15th, mainly for the fact that it is mid January, halfway through the month, a good time to release it or info on it.

To me at least Bioware apologizes , Capcom offers zero in the way of an apology.The thing is demo's have to be checked and are then put on a set schedule to be released.Even if it's ready , it's in a line with other demo's/content that release on a set day.
I suspect sometime in January the demo will be released(at the latest february) , and I think bioware has been prepping their servers to handle the multiplayer capacity.

That actually happened. Jessica Merizan came on the last day where it would be announced or be a faux pas, and essentially said something along the lines of what you said. So this was covered by the social media manager, and we were told that anything concerning an announcment had been pushed back to January.
