The Prothean doesn't fill the role of Grunt. I think that Grunt's role will be filled, more or less, by Vega, which, from the dev's twitter (one or two months ago if I recall), seems to be the "tank" that Grunt was in ME2.
About the Prothean's class, from the spoiler the choice is restricted between two classes, and it's not the Soldier class.

Well, I'll be disappointed if there's no krogan teammate but I'll understand why. My first playthrough will be as a Soldier so I can probably make up for it. XD
