When I played ME2 on my PC, I got a Paragon/Renegade point boost for importing my ME1 save file. As a result, I never had a moment when my charm/intimidate option was greyed out.
When i bought a PS3, I decided to buy ME2 on the system because I wanted to play the game as it was intended (with max graphics and less freezing up; my computer kind of sucks at gaming). Unfortunately, there is no ME1 on the PS3, so I had to start everything from scratch. When I played through, most of the major charm/intimidate options in the game (preventing Tali from being exiled, getting Zaeed's loyalty, stopping the fight between Jack/Miranda, regaining Jack/Miranda's loyalty, etc) were greyed out because I didn't have enought Paragon/Renegade points.
I figured that when I start a New Game+, I would get a boost, but I read that the morality bars are completely emptied out. So, what are some tips? I played as a Vanguard (which I loved, btw) and maxed out my Assault Mastery for the +100% Paragon/Renegade points, but even that wasn't enough on my first playthrough. Did I do something wrong? Any help or advice?
I loved it when I played on the PC because I was able to choose the Renegade option when I didn't agree with the Paragon option and didn't have to worry about not having enough points. Am I going to have to just pick everything that grants Paragon points?
Tips for getting max paragon points in ME2-PS3 version

Pretty much. Also, anytime you go to a hub (Omega, Citadel, etc.), go around and get all the available points there as soon as you can. The persuasion is based on percentages: your current total versus the maximum possible P/R score at that point in the game is calculated and compared to the target percentage for that dialogue option. So, you want to grab all that easy stuff up before you get to something relatively difficult to keep that ratio high. If you don't, you'll inevitably fall behind, and once that starts to happen, it'll only get worse as you start missing out on the stuff that hands out big morality awards.

Well, I guess that's what I'll have to do then. I hated that a lot of my Charm options were greyed out. Thanks for the advice.
