How does this work? Does the struck target roll a caster level check against the DC? What's the difference between On Hit: Dispel Magic and On Hit: Greater Dispel Magic if the DCs are set the same? Does the character level of the weapon with On Hit: Dispel affect anything?

The caster level check of whoever cast the original spells is tested against the DC. If those buffs are granted by items or potions, it's tested against whatever caster level their effects are set to. At least that's my experience playing an elf with an on hit: dispel scimitar for years on a PW. I'd love to find out its exact mechanics myself.

I play on a PW with an On Hit: Dispel DC 26 item that only seems to dispel enemies with less than 20HD. You'd think a DC: 26 would have success against even level 20 casters who've practiced caster bugged their caster levels to 23, but it never does. This has led me to postulate that the cap is either related to your character level (DC can be set 26 but only effectively works as high as your level) or that the Dispel and Greater Dispel variants have caps on their DCs despite what the toolset lets you assign / game lets you craft.

What's the difference between, for example, On Hit: Dispel Magic DC 26 and On Hit: Greater Dispel Magic DC 26?

Essentially nothing since they should effectively cap at 10 and 15 respectively. I have wondered if DC actually does anything with this property, or if the dispel effect is set to the base for the spell in question. Unfortunately none of my likely flawed tests were conclusive. Short of digging into the files, it's all guesswork.
