Will he look like the previous games as seen in the beta or will he be wearing that hat from the demos?

The demo footage suggests that we will see him both the combat wear (hat) and in his normal attire.

You mean the demo or the leaked beta?
Because the leaked beta didn't have any shaders present, which explains why sometimes the lighting and colors looked a little weird. Textures also seemed to be incomplete and lots of textured looked like temporary textures.
