Funny. I used to think the same. Ashley is someone you need to know better before you can actually fall for her.
My first (never finished) Shepard went after Tali. When I found out I can't have her, I tried Liara. It was okay, but then I stopped playing that Shepard. So I wanted to go after an alien lover first.
My first full playthrough tried Ashley instead of Liara. Think she was pretty but not extraordinary beautiful. That idea came the more I explored her romance. I think of both ME1 romances for a male Shepard, the one with Ashley was the more appealing to me.
And since that day I started to admire Ashley as a character. Think her looks were fine in ME1 and appropriate for a frontline soldier.
Since she's no longer a frontline soldier but an officer, she might get new looks. Maybe she loves wearing open hair and used that formal style only because it was mandatory for normal soldiers.
The only thing I don't like is her unifom and only one part - her ridiculous white pants.
Besides that - as I said - as long as Ashley behaves like Ashley I'm happy. And appearances can be changed, maybe there's one without those pants.
