If someone's gonna help you, it'd be nice to know what class you're playing. Also, I'm going to assume you have the latest patch installed.
Rogue Hawke: Shadow/Duelist - what mr_afk did in his video. Throw the Gauntley for -50% defense, Vendetta, Decoy, Twin Fangs, autoattack till dead. If you have the item packs, use Beraht's Revenge/Bard's Honor dagger set. Having the Poisonwood Locket will also improve your dmg greatly (+12% nature dmg) OR Shadow/Assassin - Decoy, Mark of Death, Assassinate, Twin Fangs, autoattack till dead. Same daggers.
Mage Hawke: Winter's Blast and Deep Freeze + nature/cold staff. Some kiting is involved, but it's generally an easy time (unless you get stabbed and murdered afterwards).
Warrior Hawke - I've seen duels of 1h Reaver with maxed out strength and Desdemona's Blade go rambo to lower thei health, then stun the Arishok (Combustion Grenade), fire off Sacrificial Frenzy and Assault + Scatter + some autoattacks (mr_afk did that, too). Personally, there's no way in hell I duel the Arishok as warrior. I find fighting his mobs to be much more entartaining and that way it doesn't turn into a battle of attrition. In that case, slay the enemies nearest to your companions, put them in a corner and wait for the rest to catch up. Slay the mages ASAP unless you have a ton of electrcity resistance (which I doubt you do, cuz not many ppl bother with this s***). When adds are dead, proceed to wear down Arishok's health. Look out for his AOE attack.
Something I should've asked first - do you play NM?

If you're fighting against the Arishok+Qunari, then it would probably be best to take out the minions and then the Arishok. Killing the Saarebas (x2) is especially a good idea.

Beyond that, keep moving, don't get hit, hit the Qunari often and pot like mad.

If you mean the Arishok, then "hit it until it stops moving". You can evade all of his attacks.

I find doing a figure 8 around the two pillars sometimes gets him caught behind one of them for a moment allowing you to hit him with some ranged items for a short time.

the dog is definitely helpful. Although he doesn't do lots of damage, he can sure distract enemies.

1.) WTF is a Cunarie? I know what Qunari is. But I have no clue what a Cunarie is. Is it Qunari crossed with Canary?
2.) Just in case you didnt know, Qunari is a religion not a race. The Arishok's actual race is called Kossith.
