Yes, Morrigan can learn to heal, she just doesn't start out with heals like Wynne does, and I believe you could make her a Spirit Healer as her second specialization if you so choose.
The lore seems to be that only those the spirits consider sufficiantly noble get to be spirit healers.

She can grab the 4 basic heals/regen spells from the creation tree, but she cannot become a spirit healer as far as i know.

It actually indicates the spirits could be manipulated, or simply choose someone, as well.

Spirit healers get a group heal, revival spell and a healing mode.
I think Morrigan can access Spirit Healer as her second specialisation at level 14.

seriously, Nature spirits (Dryads) have a totally differtent concept of those values than say a Pride spirit
I mean look at that Driad that is the leader of the Werewolves in the teaser videos from E3 for instance
I'm pretty sure any member of the party can pick any specialization
speaking of which what would Dog and Shale specialize in?? will they have unique specializations?

All NPCs start with one specialization allocated. You can choose any unlocked, class-appropriate specialization for their second one once it is available to be allocated.
The player starts without any specializations allocated. You get to allocate both of their specializations.
All mages have access to Heal, Regenerate, Rejuvenate and Mass Rejuvenate. Morrigan does not start with any of these, but can learn them as she levels up. Any mage can heal but only a spirit healer excels at it.

"Becoming a spirit healer, however, is no simple matter. To gain the services of such benevolent and righteous beings requires that the mage earn their trust. Often this requires a series of trials to prove that the mage’s goals are as noble as the spirit demands, though some mages have claimed to command the compliance of such spirits through sheer force of charisma. Some spirit mages even claim they did not choose their calling; instead, a powerful spirit chose them and led them into lives of service and ordeal. "
It actually indicates the spirits could be manipulated, or simply choose someone, as well.
I know this will be the case for our first game, but I'm confused over what they said earlier - that after you unlock a Specialisation, when you play another new game it'll be available from the start. Would that mean Morrigan can still be evil and get it? And does it just mean that the quests are unnecessary but the levels are the same, or can you start them at Level 1 (for the stat boosts; I know you couldn't get any of the skills)?

It's already been confirmed that any companion can complete a specialization quest. Morrigan as a Spirit Healer was the exact context that inspired the answer.
Are you sure? Because I remember reading that there are some specializations that NPC's wont accept. For example you cant make Allistair (a templar) a reaver.

It was confirmed earlier today that an NPC rejecting was considered, but dropped. Though it was confirmed that they may really dislike doing it.Oronduil wrote...

From the QA Lead.
While it was originally intended that certain people would refuse to learn certain specializations, we decided to not go with this implementation. If you have unlocked it, anyone can learn it.
That said... the act of unlocking certain specializations may cause issues with some party members...
