Picturing the N7 Defender armor with the N7 Valkyrie and the N7 Arsenal Pack on my Soldier Shepard. Talk about matching.

Yep, and Cerberus soldiers wear that armor basicaly already. I kinda like it because somehow it looks bit more like armor made of metal than the previous ones.

Aye, I'm bit afraid because the helmet color doesn't translate on the armor, that I can't change the colors. It'd be "too bad".

I don't think this helmet comes with armor.

Also, the armor clearly has a texture - or rather, "material," per ME2. So those are unlikely to go away.

That might be so. Wouldn't it be lame if Bioware would go backwards in the armor customization? Because I really haven't seen yes or no about it.

I agree, the armor custimization should be part of Mass Effect 3, including the option to change color and MATERIALS.
Unlike you, changing materials made completely sense to me, it all has to do with the way lighting is used within the game engine.
It's a subtle, but very effective effect, you can make your armor look like rough metal, very shiny almost chrome-like metal or plasticy pearl look.
To me, this material slider was the finishing touch for my Shepard's look of the armor, again, you have to have a eye for detail to appreciate something like the material slider and Bioware better not drop it in ME3!
I agree with you that more use colors, patterns and different ways of custimization of each armor piece would be a great option.
I also want to be able to change the color on all armor types, for example, in ME2 you couldn't change the color of the Cerebus Assault Armor, which was white as default, I really wanted to paint it black.
Another option I want back in ME3, wich sadly was dropped in ME2, is the helmet toggle.
I want to choose when I remove my helmet, If I descide to play as a Shepard character who refuses to take off his or hers helmet...ever, I should be able to, which means this Shepard would be seen wearing his or hers helmet during combat and during conversations.
And don't tell me, why would you want to do that, you will never see his or hers face...doesn't matter, it's an option, if you want to see your Shepard's face, just toggle it off.
Oh yeah, speaking about removing helmets, on some special armor types, like the Cerebus Assault Armor and Inferno Armor, you weren't able to remove your helmet...at all, which was stupid in my opinion, just visit a club and get a drink in ME2 while wearing one of those two armors.
With that said, I really hope armor custimizations in ME3 will be even better than ME2.

Anyone else getting a bit of a Space Marine(40k) vibe from the Defender set? I really hope its customizeable.
