I literally have a Shepard for every romance. I'm close to having enough Shepards for each permutation of romances (I'm only missing "cheating on X with Tali" and "cheating on X with ME3 'mances")

Liara, because she was my LI during my first play through of ME1, and she didn't screw me over like Ashley in ME2. This is all assuming you can't bromo Garrus in ME3. I might be straight, but damn if I were to go gay, it would be for Garrus fo sho.
