My main Shep is definitely going to romance Kaidan. He went on every single mission with her in ME, and she dealt with Horizon and remained faithful despite the situation. So Kaidan.
My other FemShep is probably going to either go with Garrus or Vega. Not sure yet.
M!Shep is going to be Jack because she's awesome, and my other M!Shep will go with Miranda.

Alyson is Spacer / War Hero Chaotic Good Vanguard. She's got really close with Kaidan on their fascination with "doing good things and helping people", and Chaotic vs. Lawful conflict brought passion to this couple. And if Alyson wants something, she charges to it, no matter the obstacles.
Ingrid is Spacer / Ruthless Chaotic Evil Infiltrator. Her main condition in choosing life partner is "smart, independent and doesn't take crap from anyone, me included". Initially was supposed to be single (because every potential candidate failed this little test), but straight after Horizon she just turned to screen and told me "I want this man". Will look what ME3 thinks about this.
Mark is Colonist / War Hero Chaotic Neutral Soldier. He thinks that the more sex the merrier - and exists to prove his awesomeness. He already romanced Liara and Tali, plus several not-so-deep or not-with-squadmates relationships were sarted (casual sex with Jack, Consort, Kelly; attempted threesome in ME1). I'm thinking about new playthrough with Miranda added to mix. For ME3 Mark is planning to have new girl.
Max is Spacer / Sole Survivor Lawful Good Infiltrator. He's apparently calm and sweet but very, very broken inside. He was planning to do nothing and hence sabotage Cerberus, but then decided to recruit Subject Zero to help him destroy Cerberus. When he first saw Jack's big sad eyes, something clicked - now he fights to bring her happiness, even if this happiness takes "not taken again by Cerberus or gooified by Collectors or destroyed by Reapers" form. It's the story of how two broken souls met, and ME3 will be the final of their story, no third parties allowed.
Angel is Colonist / War Hero Neutral Good Engineer. He's sweet and naive, maybe too naive and simple sometimes, and tries to live life without complicating things. Her couple for ME2 is Jacob - stable guy which doesn't create problems. What will happen in ME3 depends on availability of said Jacob - if he will be there, she won't look for someone else, but if not... well, Angel doesn't believe in star-crossed lovers, so she'll find another person she's happy to be with.
Mona is Earthborn / War Hero Lawful Good Sentinel. She's very reserved and thought that people care while they need something and would drop like hot potato when they don't. Kaidan, another reserved Sentinel, proved her wrong in ME1... just to give Horizon in ME2. Since then, Mona is as broken as before. He's pragmatic, even in love - he had long list of traits his future wife has to posess and refused to have more or less lasting relationships before he'd find one. Turns out, his ideal found him herself, embodied by perfect Ms. Lawson. Since it's exact match, Jordan will stay loyal in ME3.

Her only attempt to build a relationships, Garrus, ended up carried away by seeker swarms (consequence of not having Biotic Specialist), and this further proves theory for her. Garrus is more like a big brother to me and Thane... Well, I like him but... we're just friends.
So my choice is Jacob But I will always remember the night I spent with Kaidan before Ilos...

My main Shep stays faithful to Kaidan (was heartbroken after Horizon) as does one other.

My Ultimate Shepard remained single for the whole ME 1-2 run to wait for Kasumi in ME3. She is funny, kind, sexy, japanese and Bioware will not fail me so they will make her romancable. Right, Casey?
