I'm not sure you have to work harder to get the bi NPC's the romance you in DA:O; the devs admitted that was a bad decision on their part when it went down in Jade Empire that way.
As for the advertising, they pandered to the teen male crowd because that crowd responds to such pandering by buying the game; females and (most) gay gamers may wish that they would be titillated by the character profiles, but marketers consider them either more sophisticated (in the case of gay people) or more responsive to other features and that catering to them in a minute long video would turn off the masses of horny male teens.
I understand your point about the culture - minorities get only token nods to what they want. At least in advertising and, I suppose, in the distribution of sexuality amongst the NPC's. Why let Bioware get away with tokenship - prod them to do even better, to actually include homosexual-only romances and to fully realize the dreams of the gay gaming minority. That's a fine sentiment.
However, I think it's ultimately unproductive complaining on the boards as a lone activist voice who has said he won't buy the game despite it being nominally better than most others in this department. You're not even in the customer base, just a theoretical customer they could pick up at some future time when they already have a strong following amongst gay and lesbian gamers. Further, you've demonstrated a pickiness that probably leaves developers thinking it's not worth their time to pander to.
Really, though, given the state of the public's attitudes towards sexuality, complaining about a video game with same-sex relationships in it because it doesn't have strictly homosexual NPC's and is marketed to the wide audience of young straight male gamers is a tempest in a teacup.

I have been in this same position before, albeit younger and more emotional and willing to buy the products back then. KOTOR, JE, and ME's handling of bisexuals were less than stellar gestures. At this point I do not need to spend money to sum up what I know to be true about the bisexual portrayals in DA. BioWare's past silences on the topic and their decisions which led to disgraceful LGBT exploitation all speak much louder to me than any claims they make or anyone may make on their behalf.
So to sum up the argument...
-Zevran must not be bisexual, flamboyant, effeminate, or ethnic, or else the OP is offended. Bisexuality, flamboyancy, effeminacy, and ethnicity to be judged at the OP's personal discretion, and not by any objective real-world criterion.
-If he is bisexual, then every other romanceable NPC must be bisexual, or else the OP is offended. In the name of equality.
-The more well-rounded a character that Zevran is and the more that his backstory supports his personality, the more offended the OP is. Any thought put into fleshing out any character who is not Alistair is considered exploitation.
-If Leliana does not fall in love with a woman as easily as she falls in love with a man, the OP is offended. In the name of equality.
-If her ex was a woman instead of a man, the OP is offended.
-Zevran's trailer does not depict male sexuality as much as Morrigan's and Leliana's depict female sexuality in spite of all of them containing the exact same amount of sexual content because, in the OP's opinion, it just doesn't.

To your first try, Zevran can certainly be all those things but Alistair needs to also be a possible M/M option in order to flesh out LGBT representation in DA. We see that Morrigan and Leliana are meant to contrast each other, and are both approachable by male PCs. The same goes for female PCs approaching the contrastable Zevran and Alistair. Every PC is granted the chance to choose or have up to two opposite-sex couplings among the companion props. Why then should the same-sex couplings be left in the minority? Nobody has to try and get them all, but this deprives LGBT gamers of equal choice and representation when compared to straight gamers.
You left out the part where his apparent non-human heritage factors in. He was chosen to be the token M/M because he has qualities far removed from the western status quo. I.E., inhuman, non-white, and he resembles the drama club president more than the quarterback. This is why it is "more acceptable" to the public when a male in the entertainment industry comes out, although it is "never acceptable" for one who has prospects and potential to be a virile leading man in romances and/or action movies to do the same. It is also why not a single male gay athlete in a major American sport is willing to be out. The only ones who have did so after their sports careers ended. Alistair the human(and to an extent, Og and Sten when compared to Zevran) outwardly resembles the jock. It is for this reason that BioWare excludes Alistair from M/M.
To the poster who mentioned that Alistair's video was released prior to acknowledgment that there would be in-game romances, I have only this to say: BioWare always includes in-game romances. That Alistair's video was timed to be released ahead of the official statement for you to claim plausible deniability on BioWare's behalf in not portraying him as someone whose sex life is equivalent to Leliana and Morrigan's is another among many LGBT cop-outs coming from BioWare.
To address the previous poster, your second assessment is correct.
To your third try, incorrect. See my response to your first try for clarification.
To your fourth attempt, incorrect. Leliana should be as equally difficult or equally as easy to approach by both male and female PCs regardless of what gender her ex was.
To your fifth, incorrect. I'm not sure where you got the impression but her past involvement with women alone is not cause for me to feel offended. That BioWare would try and twist it into unequal levels of courtship initially for male and female PCs to approach her is what offends me. It is an arbitrary trait pasted onto this npc prop.
To your sixth comment, incorrect. Please see my comments on all the trailers in the previous thread.
