I chose a Mage for my character, spent my talent points (I couldn't click the Next button without spending all my points) and then I got to the Skills page. It seems I'm preselected with certain skills: Herbalism and Combat Tactics...which is fine. But why is it preselected? Or is there a way to change the selections? I'd really like Coercion...
Then I get to the Spells page and I'm set up with a simple Arcane spell. No options to pick other spells (I'm guessing because I'm only level 1). Or can I select some other spell besides that Arcane one?
Just wondering. Any help is appreciated.

Don't worry these are only, I suppose, the compulsory/bonus skills and talents that you start off with.
Each character starts with two skills and one talent, depending on your class and origin (so in the mages case the skills are herbalism and combat tactics, and the talent/spell Arcane Bolt, while a dalish elf rogue will get survival, poison making and dirty fighting etc.)
Then you get to choose one more skill and two talents/spells when creating your character.
Also just so you know, rogues receive one skill point every two levels, while warriors and mages receive one skill every three levels, and (this may be obvious but) everyone gets one talent/spell per level.
